味精

  菜起锅后放。味精的主要作用是给植物性食物增加鲜味,给肉食增加香味。但是,当食物温度到达120℃以上时,味精会变成焦化谷氨酸钠,不仅没有鲜味,还有毒性。所以,味精在70℃—90℃时使用效果最好,一般在菜起锅后马上放。
