  牛肉富有弹性,在烹饪上多以卤水或小炒烹制。今天介绍的做法采用蒸的形式,将牛肉与陈皮结合,陈皮独特的芳香为牛肉起到画龙点睛的作用。

  材料:牛肉300克,陈皮1/3块(水发后),冬菜80克,葱花10克,盐、糖、生抽、胡椒粉、生粉、米酒、花生油各适量。

  做法:陈皮切丝备用;牛肉洗净切薄片,以少许米酒、陈皮粉、盐、糖、生抽、胡椒粉、生粉、花生油拌匀备用。将冬菜铺于碟底,摆上牛肉,撒陈皮丝,放入蒸炉蒸至熟透后取出,撒葱花即成。
