  立秋已过,但广州还是酷热难耐,许多人都没有胃口。广东省人民医院中医科副主任医师林举择向您推荐“凉瓜鲜虾瑶柱羹汤”,开胃佐餐之余还能消暑保健。

  苦瓜在广东又称为凉瓜,中医认为苦瓜有清热除烦、解毒明目、清心养颜之功。不过,苦味食物均属寒凉,脾胃虚弱或者阳虚体质者不宜多食或者酌情搭配生姜食用。为搭配苦瓜选用了有滋阴补益、惹味开胃功效的鲜虾仁和瑶柱,还有健脾补虚作用的鸡蛋以及重用生姜佐制苦瓜的寒凉食性,使之不伤人体正气和中焦脾胃。在烹饪方法的选择上,选用了羹汤的方式,入口更加爽滑清新,容易消化吸收。

  材料:苦瓜500克、鲜虾仁250克、瑶柱100克、鸡蛋2个、生姜4片、生粉适量。

  制作:苦瓜洗净,切开后去掉瓜囊,再切成小块状;把切好的苦瓜和生姜片倒进搅拌机里,加入适量清水后搅拌成糊状;瑶柱浸泡软后撕成小块状;鲜虾仁洗净后切成小粒状。鸡蛋打开,捞起蛋黄,加入生粉和少量清水打成芡。锅里加入清水1500毫升左右(约6碗水分量)和鲜虾仁、瑶柱丝,武火煮沸后加入苦瓜糊,边搅拌边慢慢推入鸡蛋白芡,稍滚片刻后调入适量食盐和花生油即可。这是三四人分量。(记者 陈映平)
