剩下的饺子皮如何利用?一碗疙瘩汤做起来

家里包饺子剩下了饺子皮,再做馅没必要,扔了可惜又浪费,于是我用剩饺子皮做成了东北疙瘩汤,口感还不错。

【饺子皮疙瘩汤】

材料:

饺子皮10张、西红柿1/2个、鸡蛋1个、油1汤匙、盐适量、香油1/2汤匙、葱1段、姜1片、白胡椒粉少许。

做法:

1.食材备齐,西红柿洗净;

2.将西红柿切成小丁,葱切葱花,姜切末;

3.将鸡蛋磕入碗内,搅打均匀;

4.将5张饺子皮落在一起,先切成条,在交叉切成小片,抖散,其余5张依样切好;

5.锅加油烧热,下入葱姜爆香,下入西红柿丁翻炒至变软出水;

6.加入适量水烧开;

7.下入面粒,煮至飘起;

8.关小火,淋入鸡蛋液,待鸡蛋液凝固,开大火烧开,关火,加入盐调味,在淋入香油,撒入少许白胡椒粉,搅拌均匀即可盛出;

小贴士:如果饺子皮比较软,撒上少许面粉在叠在一起切,防止粘连,西红柿要炒制变软出水,汤才有味道,淋鸡蛋液时要关小火,凝固后再烧开就可以了。如果用大火煮不出蛋花的形状。
