  盐焗这种通过物理热传导的烹食方法让食物更加美味。而用盐焗的手法制作海鲜鱼更能体现以咸带鲜的特点,今天的食单便是案例之一。

  材料:多宝鱼一条,荷叶一张,姜片30克,葱段30克,蚝油少许,粗盐1公斤,细盐、胡椒碎、生抽各适量。

  做法:多宝鱼洗净切成2厘米厚的片状,吸干表面水分;加入少许盐、蚝油、胡椒碎、生抽,拌匀;开锅下油,下姜片和葱段,放入多宝鱼片以大火煎至两面金黄色,起锅吸干油分,用荷叶包裹;放在炒热的粗盐中焗5分钟或者至熟透即成。
