家常菜:咸柠檬陈皮蒸乌头鱼的做法

  现在正是吃乌头鱼的时节,这时的乌头鱼肥美,不时会看到鱼身的黄油,咸柠檬可以解腻,而陈皮可以去腥增香,这是较优化的一种组合。

  材料:咸柠檬半个,陈皮1/3块(水发后),乌头鱼一条(约一斤),葱花10克,盐、麻油、豉油、花生油各适量。

  做法:陈皮切丝备用;咸柠檬以清水滚开至出味,取出切片备用;乌头鱼处理好后以盐、花生油拌匀上碟,将咸柠檬片、陈皮丝平铺在鱼身上,入蒸炉大火蒸8分钟至刚熟,取出撒葱花和放入适量豉油、麻油即成。
