蛋黄煨豆腐 补钙降脂

  食材:南豆腐300克,南瓜150克,咸蛋黄2个,香葱、鸡粉、水淀粉、橄榄油、盐适量。

  做法:1.南豆腐切成1.5厘米见方的丁,南瓜蒸熟后碾成蓉,蛋黄碾成颗粒状,香葱切碎。2.锅中烧沸水,加少量盐,倒入豆腐,中小火煮至豆腐浮起,捞出后浸入冷水中。3.不粘锅中放一汤匙橄榄油,将葱白碎爆香、放入南瓜蓉炒香,加入一小碗清水,放入咸蛋黄碎烧开,加入豆腐,小火慢煨。4.待锅中汤汁吸收差不多之后,放入水淀粉、鸡粉收薄芡,盛到深盘中,撒入绿葱花即可。

  点评:豆腐富含植物蛋白质、核黄素、大豆异黄酮、钙和镁,是补钙降脂的养生佳品,低温烹饪可以保留更多的营养素。咸蛋黄中含有较多胆固醇,搭配豆腐和南瓜可以减少胆固醇的吸收几率。需要提醒的是,咸蛋黄不能煸炒,否则产生太多的氧化胆固醇,对心脑血管健康不利。
