冬笋排骨汤 适合便秘人群

  材料:排骨500克,新鲜冬笋500克,生姜数片(2~3人量)

  烹调方法:将冬笋洗净焯水后切斜块备用,排骨斩成小块后焯水备用;把所有材料放入锅中,加入1000毫升清水,大火烧开后转小火再烧45分钟,加盐调味即可。冬笋可捞起,加少许酱油、芝麻油调味食用。

  汤品点评:竹子一年四季都能长竹笋,根据采摘的季节可分为从土里挖出来的冬笋、已出土的春笋和夏秋季之间笋尖部位的鞭笋。冬笋又名嫩笋,每年11~12月是冬笋上市的时节,此时新鲜的冬笋比春笋更鲜嫩、清脆、可口。冬笋作为低糖、低脂肪、低热量的食材,味鲜,含多种维生素、矿物质和氨基酸、膳食纤维,能促进肠蠕动,减少人体对脂肪的吸收。

  竹笋在食疗保健方面的运用有久远的历史,《千金方》中记载竹笋“性味甘寒无毒、主消渴、利水道、益气力、可久食”;《本草纲目》也提到竹笋有“化热、消痰、爽胃”的作用。竹笋配上排骨,增添鲜味的同时可解除油腻,汤水清润,适合蔬菜进食量减少的冬天食用。要注意的是新鲜竹笋有苦涩味,烹煮前最好先用沸水焯一遍。
