原标题:

  以砂锅烹煮食物,能起到保温作用,大大延长菜式的“时效性”。尤其在冬季,能保证菜式在70℃以上的最佳进食温度。

  材料:黄鳝400克、菜椒100克、洋葱50克、蒜头(去衣拍碎)15克,蚝油、盐、糖、生抽、米酒、胡椒粉、花生油各适量。

  做法:黄鳝洗净切片,以盐、糖、生抽、米酒拌匀备用;菜椒去籽洗净,切件备用;洋葱洗净切片备用;起锅下油,将黄鳝煎香至上色,取出。烧热砂锅,放入洋葱、蒜头和黄鳝,加入所有的酱料,以盐、胡椒粉调味,大火焖至全熟,然后放入菜椒翻炒一下即可。
