  老白菜炖着吃。如果你买到的白菜偏“老”,筋多,水少,适合炖着吃。用它做白菜猪肉炖粉条,是最适合冬天吃的美味。这道菜荤素搭配,有菜有肉有淀粉,营养素齐全,不但能迅速补充体力,还能抵抗寒冷。

  嫩白菜做汤吃。如果是早熟白菜,则水分含量大,叶嫩,适合做汤和涮火锅吃。冬天也是个喝汤的季节,白菜与豆腐搭配做汤,白菜富含维生素,而豆腐富含蛋白质,二者取长补短。

  此外,白菜猪肉丸汤也是冬季滋补佳品,白菜可以解猪肉的油腻,猪肉能使肉丸更加香嫩,特别适合老人和小孩食用。

  烹饪透而不蔫。白菜叶是整棵白菜中维生素C含量最高的地方,但白菜中含有的氧化酶却会破坏维C。因此,烹饪前最好将白菜用沸水焯一下。

  此外,白菜的烹饪讲究“透而不蔫”,炒白菜前可以将白菜帮用刀片薄,这样炒制之后更加爽脆。如果在炒白菜时加些醋,还可以促进白菜中矿物质的吸收。
