粉红的虾仁与碧绿的苦瓜交相呼应,色彩鲜艳、鲜香去火。在烹饪大师的手中,这道看似简单的鲜虾炒苦瓜,又能百变出什么样的好味道呢?

主料有:海白虾、苦瓜;

调料有:葱姜蒜、鸡蛋、盐、白糖、料酒;

做法:

第一,苦瓜对半切开,去籽儿和瓤儿,斜切成半圆片,放入开水中,淋少许盐和色拉油,焯烫一下,过凉备用;海白虾去头,剥壳,挑虾线,片成两半,放料酒、盐、蛋清和淀粉,进行码味上浆;

第二,热锅凉油,放入虾头和虾壳,小火熬成虾脑油备用;

第三,锅中倒入虾脑油,爆香葱姜蒜,下虾仁,变色后放苦瓜,用盐和白糖调味,倒少许清水,淋水淀粉,转大火翻炒均匀,即可装盘。
